Kat whips up…

Ok, I’m no chef. But I spent (literally) half the day in the kitchen today! I know, crazy!
I have an obsession about making food quick and healthy.

So I don’t have much of a formula or a plan and I do tend to spread myself right from one side of the kitchen to the next (just ask my flatmate Lisa!) and have at least 4 projects going on at one time.

I throw in this and that and am very into experimenting.

All the meals I make are very low in fat and high in protein and veges, and I like to cook from scratch as much as possible – so very little processed food / preservatives etc.
But, like most of us, I always want my meals to be quick to prepare!

Anyhoo, I will share what I’ve made and hopefully they may give you some ideas you can adapt to your own style.

The meals I made are all packed in containers in the fridge and freezer and will keep me going for many lunches and snacks over the next few weeks – I know I’m going to be super busy in January so I don’t want to get caught out having to buy food too often! My freezer is now stuffed full!

This is what I made all in half a day (very proud of myself!) -

Rolled oat rhubarb muffins (pretty much no sugar or fat)
Grilled chicken breasts – marinated with spices
Thai-style Stir-fried veges with slivered almonds and ginger
Brussells sprout soup – Amazing! This was my favourite, all you who like the little green things that most people hate are in for a treat!
Lean meat casserole with leeks, red wine and couscous – Again, amazing! If I do say so myself… Have been craving red meat lately so I must need some iron, I tend to eat mainly chicken and fish so this is a nice change
Grilled veges with rosemary – Courgettes, mushrooms, aubergine
